Focaccia bread

This morning, I was talking with my parents on Skype and the topic drifted to breads and especially focaccia breads. Inspired by the store-bought focaccia bread that my mom showed me, I threw together a dough with yogurt instead of water and tomato paste as well as paprika powder for color (500 g all purpose flour, 1 tsp kosher salt, 1 packet instant yeast, 2 TBS olive oil, 250 ml homemade soy yogurt, 50 ml water, 1 tsp paprika powder). Add more yogurt or water if the dough is too dry.

After kneading, let the dough rise for 90 minutes. Punch the dough down and shape in a rectangle. Decorate with olives and bell pepper. Brush over olive oil. Sprinkle coarse salt and Italian herbs on top and decorate with a couple of sprigs of Greek basil. Bake in a preheated 425 F oven for 20-25 minutes or until golden brown . Approximately 5 minutes before taking the bread out of the oven, sprinkle some garlic powder and Easy Parmesan cheese on top.
