Thai Sticky Rice

Thai sticky rice can be easily made at home. All you need is a steamer insert with matching lid and some cheese cloth. I still have a lovely sticky rice storage basket from Thailand, actually from the village where I have a house. So many good memories!

Preparation:
Soak the sticky rice (also known as glutinous rice) for several hours or overnight. Rinse and strain. Line the steamer insert with a double layer of cheese cloth. Add the strained rice. Loosely fold the cheese cloth over the rice. Bring water to the boil in a cooking pot. Once the water boils, place steamer insert on top, place lid on top. Steam for 10 minutes. Using the cheese cloth, try to flip the rice over as much as is feasible. Steam for another 10 minutes. Remove from stove. Place the steamed sticky rice on a cutting board (be careful, the rice will be extremely hot). Fold the rice over with a (wooden) spoon until it starts to hang together. Shape into a ball shape. Place in a bamboo basket and place on the table.
